I don't know about anyone else, but I used to absolutely LOVE cosmic brownies as a kid. They were so fudgy and delicious, so I made a paleo and vegan cosmic brownie recipe last year. The other day I decided to make a peppermint version because I loveeeee anything mint + chocolate. These are fudgy, paleo, vegan, gluten-free, dairy-free, refined sugar-free, and so so heavenly!

Ingredients
Here are the ingredients you'll need:
- coconut oil
- almond butter
- coconut sugar
- cacao powder
- peppermint extract
- almond flour
- coconut cream
- non-dairy chocolate chips

Paleo & Vegan Peppermint Brownies
These peppermint brownies are fudgy, paleo, vegan, gluten-free, dairy-free, refined sugar-free, and absolutely delicious!
Ingredients
Method
- Preheat oven to 350℉ and line an 8x8 pan with parchment paper.
- In a bowl, mix together all brownie base ingredients until well combined. Press evenly into the prepared pan and bake for 16-18 min. Let cool in the fridge for at least 20 min.
- In a small saucepan, melt together the fudge frosting ingredients until smooth. Spread evenly over top of the brownie base and return to the fridge to set for at least an hour. Slice and enjoy!
