Paleo & Vegan Tahini Chocolate Chip Cookies

These tahini chocolate chip cookies are paleo, vegan, gluten-free, dairy-free, and so delicious!

Ingredients
  

  • ½ cup tahini smooth
  • 4 tablespoon coconut oil melted
  • 1 cup brown sugar sub coconut sugar for paleo
  • 2 flax eggs (2 tablespoon ground flaxseed mixed with 6 tablespoon water)
  • 1 teaspoon vanilla extract
  • ½ cup coconut flour
  • 1 ½ cup almond flour
  • ½ teaspoon baking soda
  • pinch of salt
  • 1 cup non-dairy chocolate chips

Method
 

  1. Preheat oven to 350℉ and line 2 baking sheets with parchment paper.
  2. In a bowl, mix together the tahini, coconut oil, flax eggs, vanilla, and sugar until smooth.
  3. Mix in the baking soda, salt, coconut flour, and almond flour until you have a dough. Fold in the chocolate chips.
  4. Scoop the dough into about 10-11 large cookies and place onto the prepared baking sheets. Lightly flatten.
  5. Bake for about 10 minutes and let cool before enjoying!
