Peanut Butter Cookie Bars

These peanut butter cookie bars are vegan, gluten-free, dairy-free, refined sugar-free, and absolutely delicious!

Ingredients
  

  • ½ cup natural, runny peanut butter
  • ½ cup coconut sugar
  • 3 tablespoon date syrup can sub maple syrup
  • 1 egg replacer *see notes
  • 1 teaspoon vanilla extract
  • ¾ cup almond flour
  • ¼ cup coconut oil melted
  • 2 tablespoon coconut flour
  • 1 teaspoon cinnamon
  • pinch of salt
  • 1 teaspoon baking soda
  • ¼ cup non-dairy chocolate chips

Method
 

  1. Preheat oven to 350°F and line an 8x8 pan with parchment paper.
  2. In a large bowl, mix together the peanut butter, date syrup, egg replacer, vanilla, and coconut oil until smooth.
  3. Mix in the dry ingredients until you have a dough. Fold in the chocolate chips.
  4. Spread the cookie dough into the prepared pan and bake for about 20 min., or until the edges start to turn golden. Let cool before slicing and enjoying!

Notes

*I used the egg replacer by Bob's Red Mill but you can sub a flax egg (1 tablespoon flax mixed with 3 tablespoon water)
