Preheat oven to 350℉ and line a loaf pan with parchment paper.
In a bowl, mix together all of the crust/topping ingredients until you have a soft dough.
Press ½ of the mixture into the prepared pan and bake for 10 min.
In a small saucepan over medium-low heat, melt together the caramels and coconut cream until smooth.
Remove pan from oven and pour the caramel mixture over top. Add the remaining ½ of the dough on top of the caramel in an even layer.
Return to the oven for 20-25 more minutes or until lightly golden on top. Let cool completely in the fridge before slicing and enjoying!
