Line a baking sheet with parchment paper and set aside.
Begin slicing your washed apples into about 6 round slices per apple (or however many you get with how thick you like the slices!). Using a knife or a small circle cutter, cut a small circle out of the center of each apple round.
In a bowl, mix together the almond butter, maple syrup, and vanilla extract until smooth. Mix in the shredded coconut, protein powder, and salt until well combined.
Begin scooping the samoa mixture evenly onto each of the apple slices and place on the baking sheet. Place in the fridge to set while you melt the chocolate.
In a bowl, melt the chocolate chips until smooth. Drizzle the chocolate over the apple slices and let harden before enjoying!
