These Samoa protein apple slices are the most delicious and fun take on the classic Girl Scout cookie favorite: the Samoa! They have a dreamy Samoa protein filling on top of the crisp apple slices and topped with a chocolate drizzle. They are made with only a handful of simple ingredients, and I know you'll love them. They're paleo, vegan, gluten-free, dairy-free, refined sugar-free, and so so tasty!

    Prep Time 10 minutes mins
    Servings: 12 slices
    Course: Snack
    Cuisine: American
    Ingredients Method

    Ingredients

    • 2 medium apples of choice
    • ½ cup smooth, natural almond butter
    • ⅓ cup maple syrup
    • 1 teaspoon vanilla extract
    • pinch of salt
    • ¾ cup shredded coconut unsweetened
    • 3 tablespoon vanilla protein powder
    • ½ cup non-dairy chocolate chips

    Method

    1. Line a baking sheet with parchment paper and set aside.
    2. Begin slicing your washed apples into about 6 round slices per apple (or however many you get with how thick you like the slices!). Using a knife or a small circle cutter, cut a small circle out of the center of each apple round.
    3. In a bowl, mix together the almond butter, maple syrup, and vanilla extract until smooth. Mix in the shredded coconut, protein powder, and salt until well combined.
    4. Begin scooping the samoa mixture evenly onto each of the apple slices and place on the baking sheet. Place in the fridge to set while you melt the chocolate.
    5. In a bowl, melt the chocolate chips until smooth. Drizzle the chocolate over the apple slices and let harden before enjoying!
