Tahini Coconut Oat Cookie Bars

These tahini coconut oat cookie bars are ooey, gooey, gluten-free, dairy-free, refined sugar-free, and so so delicious!

Ingredients
  

  • ½ cup smooth tahini can sub any nut butter of choice
  • 2 eggs
  • ½ cup melted non-dairy butter can sub melted coconut oil
  • 1 ½ cup almond flour
  • ½ cup gluten-free oats
  • 1 teaspoon vanilla extract
  • pinch of salt
  • 1 ½ teaspoon baking powder
  • cup shredded coconut unsweetened
  • ¾ cup brown sugar or coconut sugar
  • ½ cup non-dairy chocolate chips

Method
 

  1. Preheat oven to 350°F and line an 8x8 pan with parchment paper. In a large bowl, mix together all wet ingredients until smooth.
  2. Mix in the dry ingredients until well combined. Fold in the chocolate chips. Spread into prepared pan and bake for 20-25 min. Bake closer to 20 min. for them to be super gooey! Let cool and enjoy!

Notes

Be sure to use coconut sugar for these to be considered refined sugar-free!
