These tahini coconut oat cookie bars are ooey, gooey, and oh so tasty! You can use tahini or any nut butter of your choice. They are gluten-free, dairy-free, refined sugar-free, and absolutely delicious!

- tahini
- non-dairy butter or coconut oil
- eggs
- almond flour
- gluten-free oats
- vanilla extract
- brown sugar or coconut sugar
- shredded coconut
- non-dairy chocolate chips

Tahini Coconut Oat Cookie Bars
These tahini coconut oat cookie bars are ooey, gooey, gluten-free, dairy-free, refined sugar-free, and so so delicious!
Ingredients
- ½ cup smooth tahini can sub any nut butter of choice
- 2 eggs
- ½ cup melted non-dairy butter can sub melted coconut oil
- 1 ½ cup almond flour
- ½ cup gluten-free oats
- 1 teaspoon vanilla extract
- pinch of salt
- 1 ½ teaspoon baking powder
- ⅓ cup shredded coconut unsweetened
- ¾ cup brown sugar or coconut sugar
- ½ cup non-dairy chocolate chips
Instructions
- Preheat oven to 350°F and line an 8x8 pan with parchment paper. In a large bowl, mix together all wet ingredients until smooth.
- Mix in the dry ingredients until well combined. Fold in the chocolate chips. Spread into prepared pan and bake for 20-25 min. Bake closer to 20 min. for them to be super gooey! Let cool and enjoy!
Notes
Be sure to use coconut sugar for these to be considered refined sugar-free!
