Vegan Chickpea Cookie Dough

This cookie dough is vegan, gluten-free, dairy-free, refined sugar-free, and absolutely delicious!

Ingredients
  

  • 1 15oz. can of chickpeas rinsed and drained
  • cup tahini
  • 3 tablespoon maple syrup
  • ½ cup +2 tablespoon almond flour
  • 1 teaspoon vanilla extract
  • ½ cup non-dairy chocolate chips

Method
 

  1. In a food processor, blend the chickpeas and tahini until smooth. Mix in the maple syrup and vanilla extract.
  2. Mix in the dry ingredients until well combined. Fold in the chocolate chips.
  3. Scoop the cookie dough into a jar and place in the fridge for about 30 minutes before enjoying!
