    Vegan Chickpea Cookie Dough

    This cookie dough is the most perfect texture while being made with simple and healthy ingredients. I promise you cannot taste the chickpeas in this cookie dough, they just add the best texture and protein! This chocolate chip cookie dough is vegan, gluten-free, dairy-free, refined sugar-free, simple to make, and so so tasty!

    Ingredients

    Here are the ingredients you'll need:

    • chickpeas
    • tahini
    • maple syrup
    • almond flour
    • vanilla extract
    • non-dairy chocolate chips

    Vegan Chickpea Cookie Dough

    This cookie dough is vegan, gluten-free, dairy-free, refined sugar-free, and absolutely delicious!

    Ingredients Method

    Ingredients
      

    • 1 15oz. can of chickpeas rinsed and drained
    • ⅓ cup tahini
    • 3 tablespoon maple syrup
    • ½ cup +2 tablespoon almond flour
    • 1 teaspoon vanilla extract
    • ½ cup non-dairy chocolate chips

    Method
     

    1. In a food processor, blend the chickpeas and tahini until smooth. Mix in the maple syrup and vanilla extract.
    2. Mix in the dry ingredients until well combined. Fold in the chocolate chips.
    3. Scoop the cookie dough into a jar and place in the fridge for about 30 minutes before enjoying!

      Yum! Looks good! Any substitute for tahini or can you leave out?

        I did some research on the internet. You can use any seed or nut butter, greek yogurt. I haven't tried it. But I'm going to try with a peanut butter myself.

      This recipe is so amazing. The taste is so good. I have also made it into small balls(once cooled in the fridge) and rolled each ball in 100 % cacao powder. This was also a great way to transport and share with others. So good. Thank you for sharing these great recipes. I will be trying more xx
