Vegan Chickpea Cookie Dough
This cookie dough is vegan, gluten-free, dairy-free, refined sugar-free, and absolutely delicious!
Ingredients
- 1 15oz. can of chickpeas rinsed and drained
- ⅓ cup tahini
- 3 tablespoon maple syrup
- ½ cup +2 tablespoon almond flour
- 1 teaspoon vanilla extract
- ½ cup non-dairy chocolate chips
Instructions
- In a food processor, blend the chickpeas and tahini until smooth. Mix in the maple syrup and vanilla extract.
- Mix in the dry ingredients until well combined. Fold in the chocolate chips.
- Scoop the cookie dough into a jar and place in the fridge for about 30 minutes before enjoying!

I did some research on the internet. You can use any seed or nut butter, greek yogurt. I haven't tried it. But I'm going to try with a peanut butter myself.
