Preheat oven to 350℉ and line a baking sheet with parchment paper.
In a bowl, combine all of the dough ingredients until you have a dough.
In a separate bowl, mix together your filling ingredients.
On your prepared baking sheet begin rolling out balls of dough about 1 ½ tablespoon in size and flattening. Add a spoonful of your filling to the center and add another flattened piece of dough on top to cover the filling and create the "pop tart."
Once all of the pop tarts are assembled, use a fork to pinch together the edges of the dough to ensure the top does not separate from the bottom.
Bake for about 17-20 minutes or until golden brown. Let cool while you mix up the icing.
Spread the icing evenly over top of the pop tarts and enjoy!
