Vegan & Gluten-free Brown Sugar Cinnamon Pop Tarts

These brown sugar cinnamon pop tarts are vegan, gluten-free, dairy-free, simple to make, and so delicious!

Ingredients
  

For the dough:
  • 3 cup almond flour
  • ½ cup coconut flour
  • ½ cup + 2 tablespoon coconut oil melted
  • ½ cup + 2 tablespoon water
  • 1 teaspoon vanilla extract
For the filling:
  • 1 cup brown sugar
  • 4 teaspoon cinnamon
  • 4 teaspoon coconut oil melted
For the icing:
  • 1 cup powdered sugar
  • 1 tablespoon maple syrup
  • 1 teaspoon cinnamon
  • water to thin

Method
 

  1. Preheat oven to 350℉ and line a baking sheet with parchment paper.
  2. In a bowl, combine all of the dough ingredients until you have a dough.
  3. In a separate bowl, mix together your filling ingredients.
  4. On your prepared baking sheet begin rolling out balls of dough about 1 ½ tablespoon in size and flattening. Add a spoonful of your filling to the center and add another flattened piece of dough on top to cover the filling and create the "pop tart."
  5. Once all of the pop tarts are assembled, use a fork to pinch together the edges of the dough to ensure the top does not separate from the bottom.
  6. Bake for about 17-20 minutes or until golden brown. Let cool while you mix up the icing.
  7. Spread the icing evenly over top of the pop tarts and enjoy!
