Vegan & Gluten-free Cashew Protein Fudge Bars

These cashew protein fudge bars are vegan, gluten-free, dairy-free, and absolutely delicious!

Ingredients
  

For the cashew fudge layer:
  • 1 ½ cup cashews soaked in hot water fro at least 1 hour
  • cup gluten-free oats
  • ¼ cup coconut oil melted
  • ¼ cup maple syrup or honey
  • cup vegan vanilla protein powder
  • pinch of salt
For the chocolate layer:
  • ¼ cup maple syrup
  • ½ cup cacao powder unsweetened
  • ¼ cup coconut oil melted
  • pinch of salt

Method
 

  1. In a food processor, blend the cashews, coconut oil, and maple syrup until smooth. Blend in the rest of the cashew layer ingredients until you have a dough.
  2. Press the mixture into a parchment lined loaf pan and place in freezer to set for ½ hour.
  3. Mix together all of the chocolate layer ingredients until smooth and spread evenly over the cashew layer. Let set before slicing and enjoying!
