Vegan & Gluten-free Cheesecake Bites

These no-bake cheesecake bites are vegan, gluten-free, dairy-free, and absolutely delicious!

Ingredients
  

  • 8 oz. non-dairy cream cheese I use the Kite Hill cream cheese
  • 1 teaspoon vanilla extract
  • ¾ cup gluten-free graham crackers (crushed) I like Simple Mills honey grahams
  • cup powdered sugar
  • ¼ cup non-dairy mini chocolate chips

Method
 

  1. Line a baking sheet with parchment paper and set aside.
  2. In a food processor, combine the cream cheese and vanilla extract until smooth. Mix in the powdered sugar. Mix in the graham cracker crumbs. Fold in the chocolate chips.
  3. Place the mixture in the freezer for about 30 minutes to firm up a bit before scooping. Begin scooping into "bites" and place on the prepared baking sheet. Place in the freezer to set for at least 1 hour. Enjoy!
