These cheesecake bites are so soft and absolutely delicious. They're made with the simplest ingredients and are seriously so yummy. These bites are vegan, gluten-free, dairy-free, simple to make, and so tasty!

Ingredients
Here are the ingredients you'll need:
- non-dairy cream cheese (I like Kite Hill brand!)
- gluten-free graham crackers (I like the Simple Mills ones!)
- powdered sugar
- non-dairy mini chocolate chips

Vegan & Gluten-free Cheesecake Bites
These no-bake cheesecake bites are vegan, gluten-free, dairy-free, and absolutely delicious!
Ingredients
- 8 oz. non-dairy cream cheese I use the Kite Hill cream cheese
- 1 teaspoon vanilla extract
- ¾ cup gluten-free graham crackers (crushed) I like Simple Mills honey grahams
- ⅔ cup powdered sugar
- ¼ cup non-dairy mini chocolate chips
Instructions
- Line a baking sheet with parchment paper and set aside.
- In a food processor, combine the cream cheese and vanilla extract until smooth. Mix in the powdered sugar. Mix in the graham cracker crumbs. Fold in the chocolate chips.
- Place the mixture in the freezer for about 30 minutes to firm up a bit before scooping. Begin scooping into "bites" and place on the prepared baking sheet. Place in the freezer to set for at least 1 hour. Enjoy!
