Vegan & Gluten-free Coffee Coconut Squares

These coffee coconut squares are vegan, gluten-free, dairy-free, and absolutely delicious!

Ingredients
  

  • 2 cup almond flour
  • 2 tablespoon coconut flour
  • ¼ cup maple syrup
  • cup coconut oil melted
  • 3 teaspoon instant espresso powder
  • 1 cup non-dairy chocolate chips
  • ¾ cup shredded coconut unsweetened
  • cup sweetened condensed coconut milk

Method
 

  1. Preheat oven to 350℉ and line an 8x8 pan with parchment paper.
  2. In a bowl, combine the almond flour, coconut flour, maple syrup, coconut oil, and espresso powder until you have a dough.
  3. Press the dough into the prepared pan. Evenly spread the chocolate chips over top of the cookie dough layer. Evenly top with the shredded coconut.
  4. Pour the sweetened condensed coconut milk evenly over top and bake for 18-20 minutes. Let cool completely before slicing and enjoying!
