Vegan & Gluten-free PB Date Bars

These peanut butter date bars are vegan, gluten-free, dairy-free, refined sugar-free, no-bake, and absolutely delicious!

Ingredients
  

For the base:
  • cup natural peanut butter
  • cup coconut flour
  • ¼ cup maple syrup
  • ¼ cup non-dairy milk I used almond milk!
For the filling:
  • ¾ cup dates soaked in hot water for 10 min.
  • ¼ cup natural peanut butter
  • 3 tablespoon non-dairy milk
  • splash of vanilla extract
For the chocolate topping:
  • ½ cup non-dairy chocolate chips
  • ¼ cup coconut cream

Method
 

  1. Line a loaf pan with parchment paper and set aside.
  2. In a bowl, mix together the base ingredients until you have a dough. Press this evenly into the prepared pan and place in the freezer to set while you make the filling.
  3. In a food processor, blend the filling ingredients until you have a sticky, smooth mixture. Spread this filling evenly over the base and return to the freezer to set while you make the topping.
  4. In a microwave safe bowl, melt together the chocolate chips and coconut cream until smooth. Spread this evenly over the filling and let set before slicing and enjoying!
