Vegan & Gluten-free PB&J Cookies

These peanut butter & jelly cookies are vegan, gluten-free, dairy-free, refined sugar-free, and absolutely delicious!

Ingredients
  

  • 1 cup smooth, natural peanut butter
  • cup maple syrup
  • 1 cup almond flour
  • 1 tablespoon coconut flour
  • cup strawberry jam

Method
 

  1. Preheat oven to 350℉ and line 2 baking sheets with parchment paper.
  2. In a bowl, combine all ingredients except for the strawberry jam until you have a cookie dough.
  3. Roll the dough into 14-15 cookies and lightly flatten on the prepared baking sheets.
  4. Bake for 6 minutes, remove from the oven, indent each cookie with a teaspoon, and fill each indent with the strawberry jam. Return to the oven to bake for another 6 minutes.
  5. Let the cookies cool completely before enjoying!
