These peanut butter & jelly cookies are the best cookies for all of my pb&j lovers out there! They are a delicious peanut butter cookie filled with a sweet jam. The cookies are made with super simple ingredients that are vegan, gluten-free, dairy-free, refined sugar-free, and makes them a healthy treat!
Ingredients
Here are the ingredients you'll need:
- smooth, natural peanut butter
- maple syrup
- almond flour
- coconut flour
- strawberry jam

Vegan & Gluten-free PB&J Cookies
These peanut butter & jelly cookies are vegan, gluten-free, dairy-free, refined sugar-free, and absolutely delicious!
Ingredients
- 1 cup smooth, natural peanut butter
- ⅓ cup maple syrup
- 1 cup almond flour
- 1 tablespoon coconut flour
- ⅓ cup strawberry jam
Instructions
- Preheat oven to 350℉ and line 2 baking sheets with parchment paper.
- In a bowl, combine all ingredients except for the strawberry jam until you have a cookie dough.
- Roll the dough into 14-15 cookies and lightly flatten on the prepared baking sheets.
- Bake for 6 minutes, remove from the oven, indent each cookie with a teaspoon, and fill each indent with the strawberry jam. Return to the oven to bake for another 6 minutes.
- Let the cookies cool completely before enjoying!
