Vegan & Gluten-free PB&J Protein Bites

These peanut butter & jelly protein bites are vegan, gluten-free, dairy-free, refined sugar-free, high protein, and so delicious!

Ingredients
  

  • ½ cup smooth, natural peanut butter must use a natural peanut butter that is "runny" in consistency
  • cup maple syrup
  • ½ cup +3 tablespoon vanilla protein powder of choice
  • ¼ cup strawberry jam can use homemade or storebought!

Method
 

  1. Line a baking sheet with parchment paper. In a bowl, mix together your peanut butter and maple syrup until smooth.
  2. Mix in your protein powder until you have a dough.
  3. Begin rolling your pb dough into balls about 1 ½ tablespoon in size. Flatten each ball and place about 1 teaspoon of jam in the center of the dough before rolling the dough to enclose the jam. Place on the prepared baking sheet.
  4. Place the bites in the freezer to set for about 20 minutes. Enjoy!
