Vegan & Gluten-free Peanut Butter Banana Bars

These peanut butter banana bars are vegan, gluten-free, dairy-free, refined sugar-free, and absolutely delicious!

Ingredients
  

  • 2 small/medium mashed bananas
  • cup smooth, natural peanut butter
  • 1 ¼ cup gluten-free oats
  • 1 teaspoon vanilla extract
  • 2 tablespoon maple syrup
  • ½ teaspoon cinnamon
  • ½ teaspoon baking powder
  • cup non-dairy chocolate chips

Method
 

  1. Preheat oven to 350℉ and line a loaf pan with parchment paper.
  2. In a bowl, mix together the mashed banana, peanut butter, maple syrup, and vanilla extract until smooth.
  3. Mix in the oats, baking powder, and cinnamon until well combined. Fold in the chocolate chips.
  4. Spread the batter into the prepared pan and bake for about 18-20 minutes. Let cool completely before slicing and enjoying!
