Vegan & Gluten-free Peanut Butter Brownies

These peanut butter brownies are vegan, gluten-free, dairy-free, refined sugar-free, simple to make, and so so tasty!

Ingredients
  

  • ¼ cup melted coconut oil
  • ½ cup peanut butter smooth, natural
  • ½ cup coconut sugar can sub brown sugar
  • ¼ cup almond flour
  • 2 flax eggs 2 tablespoon ground flaxseed mixed with 6 tablespoon water
  • ½ cup cacao powder
  • ¼ teaspoon baking powder
For the Peanut Butter Swirl:
  • ½ cup peanut butter smooth, natural
  • ½ tablespoon maple syrup

Method
 

  1. Preheat oven to 350℉ and line an 8x8 pan with parchment paper.
  2. In a bowl, mix together all of the brownie ingredients until smooth. Spread this evenly into the prepared pan.
  3. In a separate bowl, mix together the peanut butter filling. Spread this evenly over top of the brownie layer and bake for about 15 minutes. Let cool before slicing and enjoying!
