Vegan & Gluten-free Peanut Butter Date Truffles

These peanut butter date truffles are vegan, gluten-free, dairy-free, refined sugar-free, and so delicious!

Ingredients
  

  • 1 cup dates soaked in hot water for 10 minutes
  • ½ cup smooth peanut butter natural
  • 1 tablespoon maple syrup
  • ½ cup almond flour
For the chocolate coating:
  • 1 cup non-dairy chocolate chips
  • 3 teaspoon coconut oil

Method
 

  1. Line a baking sheet with parchment paper and set aside.
  2. In a food processor, blend together the dates, peanut butter, maple syrup, and almond flour until you have a smooth, sticky dough.
  3. Begin scooping this mixture into balls and place on the prepared baking sheet. Place in the freezer to set for at least 15 minutes.
  4. Melt together the chocolate chips and coconut oil until smooth. Dip each truffle into the chocolate, sprinkle with optional flaky sea salt, and let harden. Enjoy!
