Vegan & Gluten-free Peanut Butter S'mores Cookies

These peanut butter s'mores cookies are vegan, gluten-free, dairy-free, simple to make, and absolutely delicious!

Ingredients
  

  • cup +2 tablespoon smooth, natural peanut butter
  • 1 teaspoon molasses
  • 1 teaspoon vanilla extract
  • 6 tablespoon non-dairy milk
  • ½ cup brown sugar can sub coconut sugar
  • pinch of nutmeg
  • ½ teaspoon baking soda
  • 2 cup almond flour
  • cup tapioca flour
  • cup non-dairy chocolate chips
  • 1 cup marshmallows vegan marshmallows linked in blog post!

Method
 

  1. Preheat oven to 350℉ and line 2 baking sheets with parchment paper.
  2. In a bowl, combine the peanut butter, molasses, vanilla, milk, and brown sugar until smooth.
  3. Mix in the rest of the ingredients, except for the marshmallows and chocolate chips, until you have a cookie dough. Fold in the chocolate chips and marshmallows.
  4. Begin scooping the cookie dough into cookies and place on prepared baking sheets. Bake for about 11-12 minutes. Let cool and enjoy!
