The gooey marshmallows (these are the vegan marshmallows I use) paired with the melty chocolate and peanut butter is simply too good. These cookies are vegan, gluten-free, dairy-free, simple to make, and so delicious!
Ingredients
Here are the ingredients you'll need:
- smooth, natural peanut butter
- molasses
- vanilla extract
- non-dairy milk
- almond flour
- tapioca flour
- nutmeg
- baking soda
- brown sugar or coconut sugar
- non-dairy chocolate chips
- marshmallows

Vegan & Gluten-free Peanut Butter S'mores Cookies
These peanut butter s'mores cookies are vegan, gluten-free, dairy-free, simple to make, and absolutely delicious!
Ingredients
- ⅓ cup +2 tablespoon smooth, natural peanut butter
- 1 teaspoon molasses
- 1 teaspoon vanilla extract
- 6 tablespoon non-dairy milk
- ½ cup brown sugar can sub coconut sugar
- pinch of nutmeg
- ½ teaspoon baking soda
- 2 cup almond flour
- ⅓ cup tapioca flour
- ⅔ cup non-dairy chocolate chips
- 1 cup marshmallows vegan marshmallows linked in blog post!
Instructions
- Preheat oven to 350℉ and line 2 baking sheets with parchment paper.
- In a bowl, combine the peanut butter, molasses, vanilla, milk, and brown sugar until smooth.
- Mix in the rest of the ingredients, except for the marshmallows and chocolate chips, until you have a cookie dough. Fold in the chocolate chips and marshmallows.
- Begin scooping the cookie dough into cookies and place on prepared baking sheets. Bake for about 11-12 minutes. Let cool and enjoy!
