Vegan & Gluten-free Peppermint Chocolate Cookie Skillet

This peppermint chocolate cookie skillet is vegan, gluten-free, dairy-free, simple to make, and absolutely delicious!

Ingredients
  

  • 1 flax egg 1 tablespoon ground flaxseed mixed with 3 tablespoon water and let sit for 10 minutes
  • ¼ cup non-dairy butter melted
  • 1 teaspoon vanilla extract
  • ½ teaspoon peppermint extract
  • ½ teaspoon baking powder
  • ½ cup sugar
  • ¼ cup cacao powder
  • ¾ cup gluten-free flour
  • ½ cup Enjoy Life Chocolate Chips
  • optional crushed candy canes for topping

Method
 

  1. Preheat oven to 350℉ and lightly grease a skillet with coconut oil.
  2. In a bowl, combine the flax egg, non-dairy butter, extracts, and sugar until smooth. Mix in the baking powder, gluten-free flour, and cacao powder until you have a dough. Fold in the chocolate chips.
  3. Press the dough into the skillet and bake for about 15-17 minutes. Let cool lightly before topping with optional dairy-free ice cream and crushed candy canes. Enjoy!
