Vegan & Gluten-free Peppermint Cookies & Cream Cookie Dough

This peppermint cookies & cream cookie dough is vegan, gluten-free, dairy-free, no-bake, and absolutely delicious!

Ingredients
  

  • 1 ½ cup gluten-free flour
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract
  • ½ cup sugar
  • ¼ cup brown sugar
  • ½ cup non-dairy butter
  • 4-5 tablespoon non-dairy milk
  • 1 cup crushed gluten-free Oreos
  • optional sprinkles

Method
 

  1. Heat treat your flour by spreading it onto a baking sheet and baking at 350℉ for about 6 minutes.
  2. Cream together the butter and sugars until fluffy. Add in the peppermint and vanilla extracts. Mix in the dry ingredients and add the milk 1 tablespoon at a time until you have a dough consistency that you like.
  3. Fold in the crushed Oreos and optional sprinkles. Scoop into bites and enjoy!
