Vegan & Gluten-free Strawberry Donuts

These baked strawberry donuts are vegan, gluten-free, dairy-free, and absolutely delicious!

Ingredients
  

  • 1 cup gluten-free flour
  • 1 teaspoon baking soda
  • ½ cup brown sugar
  • ¼ cup melted non-dairy butter or ghee
  • ¼ cup applesauce
  • ½ cup non-dairy milk mixed with 2 teaspoon apple cider vinegar
  • 2 teaspoon vanilla extract
  • cup chopped strawberries
For the Strawberry Icing:
  • 2 tablespoon strawberry puree I just pureed about 4 large strawberries
  • 1 ½ cup powdered sugar

Method
 

  1. Preheat oven to 350℉ and grease 9 donut molds with coconut oil.
  2. In a bowl, mix together the melted butter (or ghee), apple sauce, brown sugar, vanilla extract, and the milk/ACV mixture until smooth.
  3. Mix in the dry ingredients until well combined. Fold in the chopped strawberries. Spoon the batter into the prepared donut mold.
  4. Bake for about 16-18 minutes or until golden brown on the edges. Let the donuts cool in the mold for about 3 minutes before removing from the mold to continue cooling completely.
  5. Mix together the icing ingredients and dip the cooled donuts into the icing. Enjoy!
