Vegan & Paleo Brookie Bars

These brookie (brownie+cookie) bars are paleo, vegan, gluten-free, dairy-free, and absolutely delicious!

Ingredients
  

For the cookie dough layer:
  • cup nut or seed butter I used cashew butter!
  • 2 tablespoon maple syrup
  • ¼ teaspoon salt
  • 2 tablespoon coconut oil melted
  • cup nondairy chocolate chips
  • ¾ cup almond flour
  • splash of vanilla extract
For the brownie layer:
  • 2 flax eggs
  • cup almond flour
  • 3 tablespoon cacao powder unsweetened
  • cup nondairy chocolate chips
  • ¼ cup maple syrup

Method
 

  1. Preheat oven to 350°F and line a loaf pan with parchment paper. In a bowl, mix together the brownie layer ingredients until you have a smooth batter. Fold in the chocolate chips.
  2. In a separate bowl, mix the cookie dough ingredients. Pour the brownie batter into the loaf pan and top with the cookie dough layer. Bake for about 25-30 min. Let cool and enjoy!
