These brookie bars are the perfect combination of chocolate chip cookie and brownie! They're paleo, vegan, gluten-free, dairy-free, and refined sugar free. They have all the tasty flavors of a warm chocolate chip cookie and a gooey fudgy brownie!

- nut or seed butter
- maple syrup
- coconut oil
- nondairy chocolate chips
- almond flour
- flax eggs
- cacao powder

Vegan & Paleo Brookie Bars
These brookie (brownie+cookie) bars are paleo, vegan, gluten-free, dairy-free, and absolutely delicious!
Ingredients
For the cookie dough layer:
- ⅓ cup nut or seed butter I used cashew butter!
- 2 tablespoon maple syrup
- ¼ teaspoon salt
- 2 tablespoon coconut oil melted
- ⅓ cup nondairy chocolate chips
- ¾ cup almond flour
- splash of vanilla extract
For the brownie layer:
- 2 flax eggs
- ⅓ cup almond flour
- 3 tablespoon cacao powder unsweetened
- ⅓ cup nondairy chocolate chips
- ¼ cup maple syrup
Instructions
- Preheat oven to 350°F and line a loaf pan with parchment paper. Ina bowl, melt the chocolate chips. Once melted, add in the coconut oil and flax eggs. Mix well before adding in the flour and cacao powder.
- In a separate bowl, mix the cookie dough ingredients. Pour the brownie batter into the loaf pan and top with the cookie dough. Bake for about 25 min. before covering with tinfoil and baking for another 8-10 min. Let cool and enjoy!
