Vegan & Paleo Mint Chocolate Chip Klondike Bars

These homemade mint chip klondike bars are vegan, gluten-free, dairy-free, refined sugar-free, and absolutely delicious!

Ingredients
  

For the mint ice cream:
  • 1 15oz. can of coconut cream
  • ½ cup maple syrup
  • 1 teaspoon vanilla extract
  • ½ teaspoon peppermint extract
  • 1 small avocado
  • ½ cup non-dairy chocolate chips
For the chocolate coating:
  • 1 cup non-dairy chocolate chips
  • 2 teaspoon coconut oil

Method
 

  1. Line an 8x8 pan with parchment paper and set aside.
  2. In a blender add all of your ice cream ingredients and blend until smooth. Taste to make sure the mint flavor is to your liking.
  3. Pour the ice cream filling into the prepared baking pan and freeze for at least 6 hours or until frozen.
  4. Remove from freezer and slice into about 9 "Klondike" bars. Begin melting together the chocolate coating.
  5. Quickly dip each frozen ice cream square into the melted chocolate and return to freezer to set. Enjoy!
