I used to loveeee klondike bars and am always craving a cold sweet treat during the summertime! These are the perfect combo of mint chip ice cream and dark chocolate shell. I promise you will be obsessed with these. They're vegan, paleo, gluten-free, dairy-free, refined sugar-free, and so tasty!
Ingredients
Here are the ingredients you'll need:
- coconut cream
- maple syrup
- vanilla and peppermint extracts
- avocado
- non-dairy chocolate chips
- coconut oil

Vegan & Paleo Mint Chocolate Chip Klondike Bars
These homemade mint chip klondike bars are vegan, gluten-free, dairy-free, refined sugar-free, and absolutely delicious!
Ingredients
For the mint ice cream:
- 1 15oz. can of coconut cream
- ½ cup maple syrup
- 1 teaspoon vanilla extract
- ½ teaspoon peppermint extract
- 1 small avocado
- ½ cup non-dairy chocolate chips
For the chocolate coating:
- 1 cup non-dairy chocolate chips
- 2 teaspoon coconut oil
Instructions
- Line an 8x8 pan with parchment paper and set aside.
- In a blender add all of your ice cream ingredients and blend until smooth. Taste to make sure the mint flavor is to your liking.
- Pour the ice cream filling into the prepared baking pan and freeze for at least 6 hours or until frozen.
- Remove from freezer and slice into about 9 "Klondike" bars. Begin melting together the chocolate coating.
- Quickly dip each frozen ice cream square into the melted chocolate and return to freezer to set. Enjoy!
