Vegan Peanut Butter Cheesecake Bites

These peanut butter chocolate cheesecake bites are the dreamiest bites! They are vegan, gluten-free, dairy-free, simple to make, and so so tasty!

Ingredients
  

  • cup creamy peanut butter make sure it is a natural, runny kind!
  • ½ tablespoon granulated sugar substitute I used granulated monkfruit
  • 8 oz vegan cream cheese
  • 1 teaspoon coconut flour
For the chocolate coating:
  • 1 cup non-dairy chocolate chips
  • 2 teaspoon coconut oil

Method
 

  1. Line a baking sheet with parchment paper. In a food processor, blend the cream cheese, peanut butter, and sugar substitute until smooth.
  2. Add the coconut flour and blend again. Place the mixture in the fridge to firm up for about 30 min to an hour.
  3. Scoop the peanut butter mixture into 14-15 bites and place on prepared baking sheet. Place in freezer for 1 hour.
  4. Melt together the chocolate coating ingredients. Dip each peanut butter cheesecake bite into the chocolate and let harden. Enjoy!
