Grain-free & Dairy-free Sugar Cookies

These sugar cookies are so soft and delicious while also being gluten-free, grain-free, dairy-free, and simple to make!

Ingredients
  

  • ½ cup vegan butter
  • 1 egg
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract
  • 3 tablespoon maple syrup
  • ¼ cup sugar
  • 2 cup almond flour
  • 2 ½ tablespoon coconut flour
  • 1 tablespoon tapioca flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
For the Frosting:
  • 1 batch my dairy-free homemade frosting *link in the notes

Method
 

  1. Preheat oven to 350℉ and line 2 baking sheets with parchment paper.
  2. In a mixer, cream together your butter and sugar until fluffy. Mix in the egg, extracts, and maple syrup until combined.
  3. Add in the dry ingredients and mix until you have a dough. Let the dough sit for about 10 minutes to allow the coconut flour to absorb extra moisture.
  4. Scoop the dough into 1 ½ tablespoon sized ball and lightly flatten on the prepared baking sheets. Bake for 8-10 minutes.
  5. Let cool. Make your frosting of choice and top each cookie with a generous amount of frosting. Enjoy!
