Grain-free & Dairy-free Sugar Cookies
These sugar cookies are so soft and delicious while also being gluten-free, grain-free, dairy-free, and simple to make!
Ingredients
- ½ cup vegan butter
- 1 egg
- 1 teaspoon vanilla extract
- ½ teaspoon almond extract
- 3 tablespoon maple syrup
- ¼ cup sugar
- 2 cup almond flour
- 2 ½ tablespoon coconut flour
- 1 tablespoon tapioca flour
- ½ teaspoon baking powder
- ¼ teaspoon salt
For the Frosting:
- 1 batch my dairy-free homemade frosting *link in the notes
Instructions
- Preheat oven to 350℉ and line 2 baking sheets with parchment paper.
- In a mixer, cream together your butter and sugar until fluffy. Mix in the egg, extracts, and maple syrup until combined.
- Add in the dry ingredients and mix until you have a dough. Let the dough sit for about 10 minutes to allow the coconut flour to absorb extra moisture.
- Scoop the dough into 1 ½ tablespoon sized ball and lightly flatten on the prepared baking sheets. Bake for 8-10 minutes.
- Let cool. Make your frosting of choice and top each cookie with a generous amount of frosting. Enjoy!
