    Paleo Chocolate Chip Cookie Bars

    If you love a soft and gooey chocolate chip cookie, you will love these cookie bars! I have plenty of gluten-free and dairy-free cookie bar recipes, but I needed a paleo version. These chocolate chip cookie bars are paleo, gluten-free, dairy-free, refined sugar-free, and so delicious!

    Ingredients

    Here are the ingredients you'll need:

    • egg
    • coconut sugar (can use brown sugar if not paleo)
    • coconut oil
    • almond flour
    • baking soda
    • vanilla extract
    • non-dairy chocolate chips

    Paleo Chocolate Chip Cookie Bars

    These chocolate chip cookie bars are paleo, gluten-free, dairy-free, and oh so delicious!

    Ingredients Method

    Ingredients
      

    • 1 egg
    • ¼ cup coconut sugar can sub brown sugar if not strictly paleo
    • ¼ cup coconut oil melted
    • 1 cup almond flour
    • 1 teaspoon vanilla extract
    • ½ teaspoon baking soda
    • ⅓ cup non-dairy chocolate chips

    Method
     

    1. Preheat oven to 350℉ and line an 8x8 pan with parchment paper.
    2. In a bowl, whisk together the egg, sugar, vanilla extract, and coconut oil until smooth. Mix in the baking soda and almond flour until you have a dough. Fold in the chocolate chips.
    3. Spread the batter into the prepared pan and bake for about 13-15 minutes. Let cool before slicing and enjoying!
