    Vegan & Gluten-free Coconut Cream Pie Bars

    These coconut cream pie bars are simply a dream! They have a yummy cookie bar base topped with a creamy coconut pie filling. These coconut cream pie bars use my favorite Nature's Charm sweetened condensed coconut milk and coconut whipping cream. They are vegan, gluten-free, dairy-free, and so delicious!

    Ingredients

    Here are the ingredients you'll need:

    • Nature's Charm sweetened condensed coconut milk
    • Nature's Charm coconut whipping cream
    • almond flour
    • coconut oil
    • maple syrup
    • coconut milk
    • arrowroot flour
    • toasted coconut flakes
    • vanilla extract

    Vegan & Gluten-free Coconut Cream Pie Bars

    These coconut cream pie bars are vegan, gluten-free, dairy-free, and so delicious!

    Ingredients Method

    Ingredients
      

    For the cookie base:
    • 1 ½ cup almond flour
    • 3 tablespoon coconut oil melted
    • 2 tablespoon maple syrup
    For the filling:
    • 1 15 oz. can of coconut milk
    • ½ cup Nature's Charm sweetened condensed coconut milk
    • 3 teaspoon arrowroot flour
    • splash of vanilla extract
    • ¾ cup toasted coconut flakes
    • optional whipped coconut cream for topping

    Method
     

    1. Preheat oven to 350℉ and line a loaf pan with parchment paper.
    2. In a bowl, mix together the cookie base ingredients until well combined. Press into the prepared pan and set aside.
    3. In a medium saucepan over medium heat, add the coconut milk, sweetened condensed coconut milk, and vanilla. Stir and cook until mixture is melted together. Add the arrowroot flour in and continuously stir until you have a pudding-like consistency.
    4. Fold in the toasted coconut flakes. Spread this creamy mixture over the cookie bars. Bake for about 10-12 minutes. Let cool in the fridge for about an hour. Top with optional coconut cream, slice, and enjoy!
