    Paleo & Vegan Lemon Cookie Bars

    These lemon cookie bars are the perfect Spring and Summer treat! They have the perfect soft texture and are made with simple and healthy ingredients. These cookie bars are paleo, vegan, gluten-free, dairy-free, refined sugar-free, and oh so delicious!

    Ingredients

    Here are the ingredients you'll need:

    • lemons
    • almond flour
    • coconut oil
    • maple syrup
    • almond extract
    • optional powdered sugar for icing

    Paleo & Vegan Lemon Cookie Bars

    These lemon cookie bars are paleo, vegan, gluten-free, dairy-free, refined sugar-free, and absolutely delicious!

    Ingredients Method

    Ingredients
      

    • 2 ½ cup almond flour
    • ¼ cup coconut oil melted
    • 5 tablespoon maple syrup
    • ¼ teaspoon almond extract
    • ½ teaspoon vanilla extract
    • 2 tablespoon lemon juice
    • zest of one lemon
    For the optional icing (not paleo):
    • ½ cup powdered sugar
    • water to thin
    For a paleo icing:
    • ¼ cup melted coconut butter
    • ½ tablespoon maple syrup

    Method
     

    1. Preheat oven to 350℉ and line a loaf pan with parchment paper.
    2. In a bowl, mix together all of the cookie ingredients until you have a smooth dough. Fold in the lemon zest.
    3. Press the cookie dough into the prepared pan and bake for about 10 minutes. Let cool before slicing.
    4. Mix together your icing of choice and top the cookie bars with it. Enjoy!

      Hi,

      I don't eat any oil. What can I substitute for the oil - do you think applesauce would work?
