    These espresso cookie bars are perfect for all of my fellow coffee lovers! These cookie bars are very soft and delicious. They are paleo, gluten-free, dairy-free, simple to make, and so yum!

    Ingredients

    Here are the ingredients you'll need:

    • egg
    • almond flour
    • espresso
    • coconut oil
    • brown sugar or coconut sugar
    • vanilla extract
    • baking soda
    • non-dairy chocolate chips
    • coconut oil

    Paleo Espresso Cookie Bars

    These espresso cookie bars are paleo, gluten-free, dairy-free, and so delicious!

    Ingredients Method

    Ingredients
      

    • 1 egg
    • ¼ cup brown sugar can sub coconut sugar for paleo
    • ¼ cup coconut oil melted
    • 1 ½ tablespoon instant espresso powder mixed with 3 teaspoon hot water
    • 1 ⅓ cup almond flour
    • 1 teaspoon vanilla extract
    • ½ teaspoon baking soda
    • ⅓ cup non-dairy chocolate chips

    Method
     

    1. Preheat oven to 350℉ and line an 8x8 pan with parchment paper.
    2. In a bowl, mix together all of the ingredients until well combined.
    3. Fold in the chocolate chips.
    4. Spread the batter into the pan and bake for about 11 minutes. Let cool before slicing and enjoying!
