So excited to try this! Have you tried a regular or mini muffin pan instead of the loaf?
Sami Smith
Hi Bethany! I have not tried either of those, but I am sure they will work-you will have to adjust the baking time. Let me know if you try it:)
Alyssa
Can you use cane sugar or brown sugar instead of coconut?
Jennifer Hirshhorn
I would like to know about replacing coconut sugar also. I can’t digest coconut very well thanks.
Dori Hill
Do you think it works as well with regular flour too?
Denise Davenport
Can I sub coconut sugar for brown sugar?
Melissa
I’ve done muffin pan and it works great. Does anyone know the calories in this recipe??
Gabrielle
Terrible, didn't rise. I followed the recipe to a T. Came out like a brick.
Rochelle
What does xanthum gum do? Can I omit it?
Cara
Hi
What have you found in baking, if any, a good sub for bananas might be?? Thx so much. Everything looks great:)
Sami Smith
Hi Cara! I have found that sometimes you can substitute applesauce or pumpkin puree. Sometimes it affects the texture as those can be more liquid-y. You can also try subbing more mashed avocado in place, but it will not be as sweet!:)
Jen
Hello! This looks soooo good! Can you provide macros?
Faith
Hi can I just use one cup of regular flour with no xanthum gum and make a regular loaf? I don’t really need it to be gluten free but still wanted to try cuz it looks good
Sami Smith
Hi Faith! Yes, that should work!:)
Marty
I am wondering which gluten free flour as well. They all act differently in recipes so it would be helpful to know which works best. Thanks!!
Afiqah
Hello. What can i substitute xanthum gum with?

Would it be possible to use oat four?
Courtney Pedersen
Will regular sugar work the same?
Lexi Kelley
A family friend sent me this recipe and I’ve been obsessed! It’s a nice work snack since I fly for a living.
Sami Smith
Hi Lexi! This makes me so happy to hear! I agree-it's a great snack to prep ahead:)
Victoria Engelmann
Can I use Truvia instead of coconut sugar? Thank you ☺️
Jill
There is no oil or butter listed in the recipe. Is that correct? I made the bread but it is not moist like your picture shows. Also, would you share which gluten free flour you used?
Thanks !
Victoria
Can you replace flour with almond flour?
Rahul
Possible to make it vegan? Replace eggs with something else?
Ana
I wanted this recipe to work, but it didn't. I followed all the steps, it didn't rise and if I leave it in the Oven for more than 60 minutes it will burn. Terrible!
Liz
This was amazing. Super moist. Couldn’t even tell that it is gluten and dairy free!! I pulled mine out at the 50 min mark.
Lisa M Armstrong
this is excellent
Carol
I made this and it was very dense, not cake-like as in photo. Not sure what I did wrong or how I could adjust for lighter texture.

Speaking for the HRI Faithful, thanks for the well wishes, Doc Yes, the pattern does suggest a bounce for Seize the Day But 3-year-olds in the spring often keep marching I had a hard time reading his pattern Besides, if Sierra Leone doesn’t win this …
Jess
Like others said, it didn’t rise, came out like a brick. I used coconut flour. Bummed I wasted all the ingredients, time and money on this.
Lins
Coconut flour should not be used as a stand alone flour as it’s too dense. Best to use a blend with rice flour
Lorrie
Coconut sugars can be replaced in equal parts with whatever sugar you want to replace it with. Its worth noting though that Coconut sugar is not made from Coconuts, but rather from the tree itself.
Dani
First try it came out perfect, but it took about 35 or 40 min. Second one not so much, very moist, but tasted amazing. What size bananas and avocado did you use? Hass avo? Apple bananas?
Serena
What can you use instead of banana please?
