So excited to try this! Have you tried a regular or mini muffin pan instead of the loaf?

Hi Bethany! I have not tried either of those, but I am sure they will work-you will have to adjust the baking time. Let me know if you try it:)

I tried the recipe today and replaced it with the same amount of psyllium husk powder. It came out good! I never tried it with the Xantham gum though, so I’m not sure if it’s comparable, but it was good.

I have made this bread at least ten times with wonderful results. The past two have not been the same and the only thing I can think of that is different is that the bananas have been very ripe. The loaves have not risen as much and have been very dense and just not as good as all the previous ones. In your opinion, would very ripe bananas have made a difference?

It's not completely dairy free - there is an egg in the ingredients list!

Hi Sezen! So eggs actually aren't considered dairy, so these are completely dairy-free:)

Just an FYI, eggs are an animal product but they are not considered dairy. It doesn’t say vegan but rather gluten and dairy free.

Hi Cara! I have found that sometimes you can substitute applesauce or pumpkin puree. Sometimes it affects the texture as those can be more liquid-y. You can also try subbing more mashed avocado in place, but it will not be as sweet!:)

There is no oil or butter listed in the recipe. Is that correct? I made the bread but it is not moist like your picture shows. Also, would you share which gluten free flour you used?

I wanted this recipe to work, but it didn't. I followed all the steps, it didn't rise and if I leave it in the Oven for more than 60 minutes it will burn. Terrible!

I made this and it was very dense, not cake-like as in photo. Not sure what I did wrong or how I could adjust for lighter texture.

Coconut flour should not be used as a stand alone flour as it’s too dense. Best to use a blend with rice flour

Coconut sugars can be replaced in equal parts with whatever sugar you want to replace it with. Its worth noting though that Coconut sugar is not made from Coconuts, but rather from the tree itself.

First try it came out perfect, but it took about 35 or 40 min. Second one not so much, very moist, but tasted amazing. What size bananas and avocado did you use? Hass avo? Apple bananas?

Unfortunately... I have done it twice and it's a disaster. I followed the recipe very precisly. The cake just didn't rise and is very dense. Almost everybody here says the same. The cake in the pictures doesn't look gluten free, sorry to say. I was very excited to try it out but it came out as a huge disappointment.

We made this vegan by adding another small banana instead of the egg... but the cooking time was much less... 35 mins was perfect! Also prob needs a little less pure cacao powder... otherwise a good recipe. Lovely served warm with coconut ice cream.
