- eggs
- coconut oil
- almond flour
- gluten-free oats
- coconut sugar
- vanilla extract
- baking powder
- non-dairy chocolate chips

Gluten-free & Dairy-free Almond Butter Cookie Bars
These almond butter cookie bars are gluten-free, dairy-free, refined sugar-free, easy to make, and absolutely delicious!
Ingredients
- ½ cup smooth, natural almond butter
- 2 eggs
- ½ cup coconut oil melted
- 1 teaspoon vanilla extract
- ¾ cup coconut sugar
- 1 ½ cup almond flour
- ½ cup gluten-free oats
- 1 ½ teaspoon baking powder
- ½ cup non-dairy chocolate chips
- flaky sea salt for topping
Instructions
- Preheat oven to 350℉ and line an 8x8 pan with parchment paper.
- In a bowl, mix together the almond butter, eggs, vanilla, coconut oil, and coconut sugar until smooth.
- Mix in the dry ingredients until you have a sticky dough. Fold in the chocolate chips.
- Spread the dough evenly into your prepared pan and bake for 24-27 minutes. The less you bake them, the more gooey they'll be! Allow them to cool for about 20 minutes before letting them set in the fridge for another hour. Slice and enjoy!

Do you use liquid coconut oil measured to a half cup or pressed coconut oil, measured to a half cup then melt it?
