    • dates
    • almond butter
    • almond flour
    • maple syrup
    • cacao powder
    • peppermint extract
    • non-dairy chocolate chips
    • coconut oil
    • optional candy canes

    These chocolate peppermint truffles are gluten-free, dairy-free, no-bake, vegan-friendly, and so delicious!

    Ingredients Method

    Ingredients
      

    • 1 ¼ cup dates soaked for 10 minutes, then drained
    • ¼ cup almond butter smooth, natural
    • 3 tablespoon almond flour
    • ¼ cup maple syrup
    • ¼ cup cacao powder
    • ¼ teaspoon peppermint extract
    • ½ teaspoon vanilla extract
    For the chocolate coating:
    • ½ cup non-dairy chocolate chips
    • 1 teaspoon coconut oil
    • optional crushed candy canes

    Method
     

    1. Line a baking sheet with parchment paper and set aside.
    2. In a food processor, blend the soaked dates, almond butter, and maple syrup until smooth. Blend in the extracts.
    3. Add in the almond flour and cacao until you have a sticky dough. Begin scooping the dough into balls and placing on the prepared baking sheet. Place in the freezer to set for about 30 minutes.
    4. Melt together the chocolate chips and coconut oil until smooth. Dip each of the truffles into the melted chocolate until completely coated. Add optional crushed candy canes or sprinkles. Let harden and enjoy!
