Anyone who know me knows that I am a chocolate lover. I will ALWAYS choose chocolate over any fruity flavor. This chocolate coconut oil fudge is not only paleo, vegan, dairy free, refined sugar free, but it also tastes like actual fudge. No nonsense here! It's so delish, it will have everyone fooled for the real, creamy deal.
When I was younger, my two older siblings got to go to Amish Country with my grandparents each year. Amish Country is just what you would think from the name, an area in Ohio where Amish people live. It's a popular spot to stop and visit because they have AMAZING cheese and you guessed it, fudge! For some reason, I was never able to visit Amish Country however, I always got to enjoy some of the fudge they'd bring home and man oh man, it was good.
I bring up that story because this treat reminds me of that delicious fudge! Since adopting a restricted diet for my health, I've missed that creamy sweet tasting chocolate and this fudge satisfies all of those cravings. It's sweetened naturally with maple syrup and the creamy almond butter along with coconut oil help add the lovely creaminess. The cacao adds in that perfect chocolate flavor to make this vegan dessert everyone will love. Enjoy!
Paleo Coconut Oil Fudge
Ingredients
- ½ cup coconut oil
- ½ cup smooth nut butter I use almond butter!
- ½ cup cacao powder unsweetened
- ¼ cup maple syrup can swap for honey
- pinch of salt only if nut butter is unsalted!
Instructions
- Prepare a loaf pan with parchment paper and set aside.
- In a pan over medium/low heat, combine the nut butter, coconut oil, maple syrup, cacao, and salt.
- Mix/whisk until completely smooth and pour into pan immediately after.
- Place it in the refrigerator to set and cool for at least 1 hour. Enjoy!
