    These pumpkin pie cookie dough bites are simply delicious! They are so soft and made with healthier ingredients. I added in my favorite Native Path collagen to give these an extra health boost! These cookie dough bites are paleo, gluten-free, dairy-free, refined sugar-free, and so tasty.

    Again, I highly recommend using this Native Path collagen in your recipe!

    Ingredients

    Here are the ingredients you'll need:

    • pumpkin puree
    • almond butter
    • honey
    • collagen
    • coconut flour
    • cinnamon and pumpkin pie spice
    • non-dairy chocolate chips

    Store in the fridge or freezer!

    FAQ

    Can I sub something else for the collagen?

    If you don't have collagen, I would sub almond flour in place of it.

    Can I use a different nut/seed butter?

    Yes, you can use any nut and/or seed butter you'd like. Just make sure it is natural and the only ingredient is the nut/seed.

    Paleo Pumpkin Cookie Dough Bites

    These pumpkin cookie dough bites are paleo, gluten-free, dairy-free, refined sugar-free, and oh so delicious!

    Ingredients Method

    Ingredients
      

    • ¼ cup almond butter smooth, natural
    • ½ cup pumpkin puree
    • ¼ cup honey
    • ¼ cup collagen
    • ⅓ cup coconut flour
    • 1 ½ teaspoon pumpkin pie spice
    • ½ teaspoon cinnamon
    • ⅓ cup non-dairy chocolate chips

    Method
     

    1. Line a baking sheet with parchment paper and set aside.
    2. In a bowl, mix together the almond butter, pumpkin puree, and honey until smooth. Mix in the spices.
    3. Mix in the collagen and coconut flour until you have a dough. Fold in the chocolate chips.
    4. Begin scooping the dough into bites and place on the prepared baking sheet. Set in the freezer to set for about 30 minutes. Enjoy!
