These homemade pumpkin waffles have been a staple in my life for years! I used to make a big batch of these and put them in the freezer to have when I was in college. These waffles are super simple to make, paleo, gluten-free, dairy-free, refined sugar-free, and so delicious!

Here are the ingredients you'll need:
- pumpkin puree
- almond flour
- arrowroot or tapioca flour
- baking powder
- spices: cinnamon, pumpkin pie spice
- non-dairy milk
- eggs
- coconut oil

Paleo Pumpkin Waffles
These pumpkin waffles are paleo, gluten-free, dairy-free, refined sugar-free, and oh so delicious!
Ingredients
Method
- In a bowl, combine the eggs, pumpkin puree, milk, vanilla extract, and coconut oil until smooth.
- Mix in the spices and baking powder. Mix in the almond flour and arrowroot flour until you have a batter.
- Preheat your waffle iron. Once the waffle iron is hot, scoop about ½ cup of the batter (this depends on the size of your waffle maker, so you may need to adjust!) and cook until golden. Let cool. Top with optional icing drizzle and enjoy!
