    Paleo Pumpkin Waffles

    These homemade pumpkin waffles have been a staple in my life for years! I used to make a big batch of these and put them in the freezer to have when I was in college. These waffles are super simple to make, paleo, gluten-free, dairy-free, refined sugar-free, and so delicious!

    Ingredients

    Here are the ingredients you'll need:

    • pumpkin puree
    • almond flour
    • arrowroot or tapioca flour
    • baking powder
    • spices: cinnamon, pumpkin pie spice
    • non-dairy milk
    • eggs
    • coconut oil

    Storage

    Store in the fridge or freezer!

    Paleo Pumpkin Waffles

    These pumpkin waffles are paleo, gluten-free, dairy-free, refined sugar-free, and oh so delicious!

    Ingredients Method

    Ingredients
      

    • 2 eggs
    • 1 tablespoon coconut oil melted
    • splash of vanilla extract
    • ½ cup pumpkin puree
    • ½ cup non-dairy milk I use almond milk!
    • 1 ½ teaspoon cinnamon
    • 1 ½ teaspoon pumpkin pie spice
    • 1 ⅔ cup almond flour
    • ½ cup arrowroot flour
    • 1 ½ teaspoon baking powder
    Optional Icing (not paleo!):
    • ¾ cup powdered sugar
    • 1 tablespoon maple syrup
    • water to thin
    Optional Paleo Icing:
    • ¼ cup coconut butter melted
    • 1 tablespoon maple syrup

    Method
     

    1. In a bowl, combine the eggs, pumpkin puree, milk, vanilla extract, and coconut oil until smooth.
    2. Mix in the spices and baking powder. Mix in the almond flour and arrowroot flour until you have a batter.
    3. Preheat your waffle iron. Once the waffle iron is hot, scoop about ½ cup of the batter (this depends on the size of your waffle maker, so you may need to adjust!) and cook until golden. Let cool. Top with optional icing drizzle and enjoy!

      The taste and texture were amazing. Any other GF waffle recipe I have tried has lady me wanting, not this one. It is perfection!
