These cherry fudge bars are simply the best way to enjoy cherries and chocolate, if you ask me! They are made with simple ingredients and taste way too delicious. These bars are paleo, vegan, gluten-free, dairy-free, refined sugar-free, no-bake, and so so tasty!

Ingredients
Here are the ingredients you'll need:
- cherries, fresh or frozen
- shredded coconut, unsweetened
- coconut cream
- maple syrup
- coconut flour
- non-dairy chocolate chips

Storage
Store in the freezer and take them out to thaw before you'd like to enjoy them!

Paleo & Vegan Cherry Fudge Bars
These cherry fudge bars are paleo, vegan, gluten-free, dairy-free, refined sugar-free, and absolutely delicious!
Ingredients
- 1 cup cherries if using frozen, make sure they are thawed
- ½ cup shredded coconut unsweetened
- 2 tablespoon coconut cream
- 1 tablespoon maple syrup
- ¼ cup +3 tablespoon coconut flour
For the chocolate fudge layer:
- ⅔ cup non-dairy chocolate chips
- ⅓ cup coconut cream
Instructions
- Line a loaf pan with parchment paper and set aside.
- In a food processor add the cherries, shredded coconut, coconut cream, maple syrup, and coconut flour. Blend until you have a mixture that can be pressed together.
- Press this into the prepared loaf pan and place in the freezer for at least 1 hour.
- Melt together the chocolate chips and coconut cream until smooth. Spread this evenly over the frozen cherry layer and return to the fridge to set for about 30 minutes before slicing and enjoying!
