This single serve Poptart is a homemade/copycat version of my favorite holiday flavored Poptart! It's super simple to make and gives all the cozy holiday vibes. It's paleo, vegan, gluten-free, dairy-free, refined sugar-free, and so so tasty!

- almond flour
- coconut flour
- coconut oil
- vanilla
- maple syrup
- coconut sugar
- molasses
- almond butter
- spices: ginger, allspice, nutmeg, cloves

Paleo & Vegan Gingerbread Poptart
This single serve gingerbread poptart is vegan, paleo, gluten-free, dairy-free, and absolutely delicious!
Ingredients
For the pastry crust:
- 6 tablespoon almond flour
- 1 tablespoon coconut flour
- 4 teaspoon coconut oil melted
- 4 teaspoon water
- splash of vanilla extract
For the filling:
- 1 ½ tablespoon almond butter
- 1 teaspoon coconut sugar
- ¼ teaspoon cinnamon
- ⅛ teaspoon ginger
- ⅛ teaspoon allspice
- dash of nutmeg
- dash of ground cloves
- 1 teaspoon maple syrup
- ¾ teaspoon molasses
Optional icing (not paleo!):
- ¼ cup powdered sugar
- 2-3 teaspoon water
Instructions
- Preheat oven to 350°F and line a baking sheet with parchment paper. Mix together the pastry ingredients and divide into two pieces of dough.
- Flatten one half of the dough into a rectangle. Mix up the filling ingredients until smooth. Spread onto the flattened pastry dough. Flatten the other half of the pastry dough into the same shape as the first one and place over the filling.
- Pinch together the edges of the dough using a fork. Bake for about 16 min. Let cool and top with optional icing. Enjoy!
