I'm not sure about you all, but I used to absolutely LOVE Oreos! I still do, if I could eat them. I know they now make a gluten-free version but I'm not the biggest fan of the ingredients...so I thought, why not make my own?! These are similar to the Simple Mills nut butter sandwich cookies you can buy at the store, but much less expensive to make yourself at home. These are paleo, gluten-free, dairy-free, vegan, refined sugar-free, and absolutely delicious!
Ingredients
Here are the ingredients you'll need:
- almond flour
- coconut flour
- dutch cocoa powder
- coconut oil
- vanilla extract
- maple syrup
- almond butter

Paleo & Vegan Homemade Nut Butter Oreos
These homemade oreos are paleo, vegan, gluten-free, dairy-free, refined sugar-free, and absolutely delicious!
Ingredients
For the Cookies:
- 1 cup almond flour
- ¼ cup coconut flour
- ¼ cup coconut oil melted
- ½ cup dutch cocoa powder can use regular cocoa powder as well!
- ¼ cup maple syrup
- 1 teaspoon vanilla extract
For the Filling:
- ½ cup almond butter smooth, natural
- 2 tablespoon maple syrup
- 1 tablespoon coconut flour
Instructions
- Preheat oven to 375℉ and line 2 baking sheets with parchment paper.
- In a bowl, mix all of the cookie ingredients until you have a dough.
- Begin rolling the dough into about 1 tablespoon sized balls and lightly flatten onto the prepared baking sheets to create the classic "Oreo" shape. Bake for about 8 minutes. Let cool completely.
- In a separate bowl, combine all of the filling ingredients until smooth. Once the cookies are cooled, begin sandwiching 2 cookies together with about 2 teaspoon of the nut butter filling in the center. Enjoy!
