    Paleo & Vegan Apple Pie Pop Tart

    I have so many pop tart flavors that I simply HAD to make an apple pie version! I used to loveeeee poptarts. I don't love the ingredients in them though, so I made a healthier alternative! These are paleo, vegan, gluten-free, dairy-free, refined sugar-free, and so so tasty!

    Ingredients

    Here are the ingredients you'll need:

    • almond flour
    • coconut flour
    • coconut oil
    • apples
    • cinnamon
    • apple pie spice
    • tapioca flour

    Paleo & Vegan Apple Pie Pop Tart

    This apple pie pop tart is paleo, vegan, gluten-free, dairy-free, refined sugar-free, and absolutely delicious!

    Ingredients Method

    Ingredients
      

    For the pastry dough:
    • 6 tablespoon almond flour
    • 1 tablespoon coconut flour
    • 4 teaspoon coconut oil melted
    • 4 teaspoon water
    For the filling:
    • ⅔ cup diced apples
    • ½ teaspoon cinnamon
    • ¼ teaspoon apple pie spice
    • 2 tablespoon maple syrup
    • 3 tablespoon water
    • 1 teaspoon tapioca flour
    Optional icing drizzle (not paleo!):
    • ¼ cup powdered sugar
    • water to thin
    Optional paleo icing drizzle:
    • 2 tablespoon coconut butter melted

    Method
     

    1. Preheat oven to 350℉ and line a baking sheet with parchment paper.
    2. In a bowl, combine all pastry dough ingredients until you have a dough.
    3. In a small saucepan over medium-low heat, cook the apple filling until the apples are soft.
    4. Divide the dough into half and flatten one half onto the prepared parchment paper to create a flat rectangle. Add your filling to this rectangle.
    5. Flatten the other half of dough to replicate the same rectangle shape. Place this on top of the filling to completely cover it. Pinch the edges of the dough together using a fork.
    6. Bake for about 17-19 minutes and let cool while you mix together your optional icing drizzle. Drizzle over the pop tart and enjoy!
