    Vegan & Gluten-free Banana Granola Bars

    These banana granola bars are an absolute dream! They are probably one of my most favorite afternoon treats. They're made with super simple ingredients and make for the perfect post-lunch and post-dinner snack. These granola bars are vegan, gluten-free, dairy-free, refined sugar-free, and absolutely delicious!

    Ingredients

    Here are the ingredients you'll need:

    • ripe bananas
    • peanut butter or nut butter of choice
    • honey or maple syrup
    • cinnamon
    • gluten-free oats
    • vanilla protein powder
    • optional chocolate chips

    Ingredients Method

    Ingredients
      

    • 2 small/medium ripe bananas mashed
    • ¾ cup smooth, natural peanut butter can sub any nut butter of choice
    • ⅓ cup honey can sub maple syrup for vegan!
    • 1 teaspoon cinnamon
    • 2 cup gluten-free oats
    • ½ cup vanilla protein powder of choice I use plant-based Orgain
    • ½ cup non-dairy chocolate chips optional

    Method
     

    1. Preheat oven to 350℉ and line an 8x8 pan with parchment paper and set aside.
    2. In a bowl, mix together the mashed bananas, peanut butter, and honey until smooth.
    3. Mix in the cinnamon, protein powder, and oats until well combined. Fold in the chocolate chips.
    4. Spread the batter into the prepared pan and bake for 25 minutes or until lightly browned. Let cool completely before slicing and enjoying!
