These gingerbread cereal bars are the perfect healthy and delicious snack for the holiday season! They're made with simple ingredients while being so so tasty. I used a high protein cereal from Three Wishes, but you can use any cereal you'd like. I personally love the gingerbread flavor and will find any excuse to add it to every recipe. These are vegan (make sure to use vegan-friendly marshmallows), gluten-free, dairy-free, and so yummy!

- cereal of choice
- marshmallows
- vegan butter
- molasses
- spices: ginger, cinnamon, cloves
- vanilla extract

Vegan & Gluten-free Gingerbread Cereal Bars
These gingerbread cereal bars are vegan, gluten-free, dairy-free, simple to make, and so tasty!
Ingredients
- 6 cup gluten-free/dairy-free cereal of choice I used Three Wishes (linked in the blog post!)
- 6 cup vegan marshmallows can sub regular marshmallows if not vegan!
- 4 tablespoon nondairy butter
- 1 teaspoon vanilla extract
- ¼ cup molasses
- 1 teaspoon ground ginger
- 1 teaspoon cinnamon
- ⅛ teaspoon ground cloves
Instructions
- Line an 8x8 pan with parchment paper and set aside.
- In a large saucepan, add the marshmallows and butter. Cook over medium-low heat until completely melted together. Stir in the vanilla, molasses, and spices until well combined.
- Immediately add in your cereal and continuously stir until the cereal is completely coated. Pour the mixture into the prepared pan and press down. I like to stick my hand in a Ziplock bag and cover the bag in butter or oil to easily press the cereal mixture down without it sticking to your hands!
- Place pan in the fridge to set for about an hour. Slice and enjoy!
